Food Tip Tuesday!

Since we are still in the season of lent, I thought I would share my family's favorite seafood meal this time of year, Seafood un-pasta! The trick with this meal is that I swap wheat noodles for zucchini instead. This dish is also gluten free, which is another plus! 

Here's what you'll need: 

•6-8 zucchini 
• 1 carton of cherry tomatoes 
• 1 onion 
• 8 oz of crab meat 
• 8 oz of scallops 
• 8 oz of shrimp, I use medium, precooked, tails off 
• 6-8 oz of fresh mushrooms 
• 1-2 tbsp of coconut oil, or olive oil if you prefer, I just eyeball the olive oil, just be careful not to use too much
• 2-3 tbsp of minced garlic 
• oregano and garlic salt to taste...remember too much garlic salt, too much sodium... 

Next step: 

• rinse the frozen seafood, shrimp and scallops, in a colander to get some of the ice off, then sit them in a bowl of water to thaw out. 
• cut all veggies; cut tomatoes in half, use a veggie peeler to cut the zucchini into thin slices, cut onion, and clean mushrooms. 
• cut crab meat into bite size pieces. 
• in a skillet, add oil, veggies and minced garlic. Cook till veggies are soft.
• once veggies have cooked down add the seafood. The seafood should already be precooked, therefore, you are just blending the flavors together. 
• add oregano and garlic salt...
• if you run out of room in your skillet for both the seafood and veggies, after the veggies have cooked down place them in a large bowl, add seafood after cooked and mix it altogether!
